WHAT ARE THE “MUST-HAVES” IN YOUR BARTENDER’S TOOL KIT?
I like precision, so I use teaspoons that measure down to 1.2 millilitres. I also like micro scales to measure out solutions. I’m not like other bartenders; I hate using mixing glasses, and I prefer using small mixing tins instead. WHAT ARE YOUR COCKTAIL BAR “HIDDEN GEMS” IN THE CITY? The Chickadee Room and the Chinatown Speakeasy Bagheera, and The Keefer Bar is still unquestionably one of the best bars in the city. IF YOU WEREN’T BARTENDING, WHAT WOULD YOU BE DOING RIGHT NOW? I’d be in the fashion industry; I still like keeping my foot in it. I would design vintage clothing. WHERE DO YOU SEE YOURSELF IN FIVE YEARS? MIGUEL TORRES EL GOBERNADOR PISCO Chile $36.99 844803 700 ml This Pisco, made from Chilean Muscat grapes, displays exuberant floral aromas of rose, jasmine, citrus peel and green tea. Expect a round and creamy weight on the palate with an extended finish.
In a cocktail shaker, combine all ingredients. Shake hard and strain into a rocks glass. Add ice and garnish with lime wheel and mint sprig. *To make Kiwi Syrup, blend 1 cup (250 ml) kiwi, 1/4 oz (7.5 ml) vodka and ½ cup (125 ml) water, then strain through a large mesh strainer. In a saucepan heat mixture with 1 cup (250 ml) sugar and stir until dissolved. Transfer to a clean bottle, allow to cool and refrigerate for up to 1 week. Makes 2 cups (500 ml). ** To make Saline, add 2 tsp (10 ml) kosher or sea salt to 7 tbsp (100 ml) water; stir to dissolve.
