Despite their fairness, these wines have enough structure to stand up to meats such as lamb and hearty bean stews or ratatouille. Their freshness and acidity complement fish, pizza, classic Mediterranean and Asian dishes and all sorts of fresh summer cuisines. There’s no need to be fancy, though; chill your bottle down to between eight and 10 degrees and sip solo, or serve with olives, a wheel of Brie and a baguette, or almonds and potato chips. Rosés are the epitome of food versatility.
