TASTE Summer 2025

Choosing the Right (Canadian) Whisky

GOLD RUSH Created at New York City’s famed Milk & Honey bar in the early 2000s, the Gold Rush is a modern take on the Whisky Sour that swaps simple syrup for honey syrup, adding richer, earthier and more floral undertones. Summer Twist: For the summer, using a high-quality maple syrup (or even a whisky barrel-aged maple syrup) can create a distinctly Canadian twist. Just be sure to reduce the amount, as straight maple syrup is sweeter than honey syrup, which is typically made with equal parts honey and hot water. This new variation, which we’ll call a Yukon Gold Rush, brings national pride to every sip. AMARETTO SOUR The classic Amaretto Sour is a beloved sweet and nutty cocktail that has evolved over time. The original version was quite simple, substituting whisky for amaretto, which resulted in a sweeter cocktail. Largely attributed to renowned bartender Jeffrey Morgenthaler, a more contemporary take on the Amaretto Sour uses a split base of amaretto and high-proof bourbon to add depth and complexity, as well as an egg white to create a silky texture, similar to the Boston Sour. Summer Twist: This summer , a bold, rye-forward whisky can be a great substitute for bourbon, bringing spice, depth and structure to the cocktail.
