BUILT ON BOTANICALS Starting with a single still in their garage, Jason brought his two decades plus of professional chef skills to the new task of making gin. He studied botanicals, extraction and distillation methods, but first, he tasted a whole lot of other gin brands. “I set out to create a gin that you could still taste the botanicals in balance, even if mixed with tonic water.” KEEPING IT LOCAL & SUSTAINABLE After operating in Sooke for five years, Sheringham Distillery outgrew the space and moved to Langford in 2023. Two years ago, the company was certified as a green business leader in BC, and “we’re working towards becoming carbon neutral,” says Jason. Since a chef’s fresh ingredients are their currency, the kelp used in the Seaside Gin is “sustainably harvested so it’ll grow back and flourish.” The botanicals are locally sourced wherever possible, and you can taste the effort in every sip. SIGNATURE SPIRITS Easy to spot on store shelves, Sheringham’s apothecary-style bottles with labels that look handwritten are designed to be “old-timey, with a bit of a nautical feel.” The Seaside Gin, with its spicy notes as “the backbone of the spirit,” is Jason’s favourite. The Fresh Rhubarb Liqueur is also wildly popular. He says, “We use our still as a kettle and cook our own rhubarb syrup with fresh lemon peel, chill it and then blend it with our gin. The flavour profile is always perfectly intact and wonderful.”
