How dark can beer go? While stouts represent the darkest of beer shades, their midnight browns and blacks are not exactly on the fall colour spectrum. Instead, we look to dark ales, a category of beers that is neither stout nor porter. Hoyne Brewing Co.’s Dark Matter is a tasty example that defies easy categorization! In their words: “It is not as roasted as a stout, nor is it as sweet or high in alcohol as a porter. And don’t even mention brown ale in the same breath.”

Amber ales are a type of pale ale that pours amber or copper in the glass, thanks to more roasted and toasted malted barley. Typically, brewers add more crystal or caramel malt to the grist. This extra grain lends a stronger malt influence and a caramel sweetness, yet the final ale remains crisp to finish. Roasting and toasting the grain longer in the kiln causes the malt to take on a darker colour, which makes for a darker beer.
