HARVEST HUES BC beers for fall
BY JAMES NEVISON
Fall is the season of change. Just as the leaves on the trees go from green to a riot of reds, yellows and oranges, the grains in our beers go from red to an autumnal palette of coppers, golds and browns. All grains contain a rust-red pigment called melanin. But during brewing, two chemical processes—the Maillard reaction (roasting and toasting the grains) and caramelization (wetting and heating them so they become sweet)—affect the flavour of the beer and its colour in the glass. This season, sample BC’s bounty of lagers and ales in their beautiful fall hues!
