Expanding on wheated traditions, Rabbit Hole Cavehill features a mash bill of 70 percent corn, 10 percent malted wheat, 10 percent malted barley and 10 percent honey malt. The honey malt, which is actually sourced from Gambrinus Malting (located in Armstrong, BC), complements the wheat well and imparts intense honey, toasted grain and orchard fruit notes. We are beginning to see some distilleries going all-in on corn, creating 90 to 100 percent corn-based bourbons that really emphasize caramel and vanilla sweetness. To further challenge wheated bourbon norms, Rabbit Hole Distillery’s Dareringer expression is finished in Pedro Ximénez casks, lending rich and raisiny black and red fruits to its profile. As we see more innovations in the bourbon category, regardless of the mash bill or cask type, there’s one thing that is certain: the future is flavourful.
