RANCH WATER Brighten it with a scoop of lime slush or sorbet, or grate frozen fruit over the top. Twist for Tequila

These are typically simple, two- ingredient drinks. Combine a spirit (one part, which could be 1 oz or a standard 1½ oz pour) and a mixer (4 to 6 oz) in a tall glass with lots of ice and a garnish that complements or nods to the flavours. The mixer is typically fizzy, and you can craft custom house-made sodas by adding splashes of juice or brine to sparkling water. But even a Caesar is a sort of highball.
GIN & TONIC Make it “dirty” with a splash of pickle brine and little gherkin garnishes.
RUM & COLA Garnish with an orange or lime ice pop on a stick instead of the usual fresh citrus.
WHISKY & GINGER BEER OR GINGER ALE Pour over large ice cubes frozen with fruit and citrus zest.

Many venerable classics— including the daiquiri and the margarita—follow this foolproof formula. The sour and sweet components are one part each (¾ oz per ingredient), and the spirit is two parts (a standard pour is 1½ oz). Shake everything over plenty of ice, which melts to dilute and balance the spirit. Egg white foam (or a vegan alternative) is customary for some variations. EQUAL PARTS COCKTAILS 1:1 These cocktails achieve their balance with equal amounts of all the ingredients. A rule of thumb: stir spirit- forward drinks (like a Negroni) with ice, and use a cocktail shaker for drinks that include juice.
GIN DAISY Use lemon juice and honey (add optional dash of elderflower liqueur), shake with an egg white for creamy foam and garnish with edible flowers.
SLUSHY MARGARITA Add 1 oz each tequila and limoncello, a scoop of lemon sorbet and a handful of ice cubes to a blender. Blitz until slushy. Rim glass with lemon-zested sugar.
TROPICAL SOUR Use 1 oz rum and up to ½ oz spicy Angostura bitters as the base, balanced by simple or agave syrup and lime juice; egg white foam is optional.
WHISKY BLACKBERRY SOUR Muddle blackberries in a shaker before adding whisky, lemon juice and simple or maple syrup. Garnish with mint.

THE ENZONI Stir together 1 oz each gin, Campari and lemon juice over ice (add ¼ oz simple syrup, or to taste, if needed for balance).
THE ROSITA Stir 1 oz each
PINEAPPLE PUNCH Shake ¾ oz each rum, dry white vermouth, pineapple juice and lemon juice with ice until frothy. Serve in a coupe, garnishd with a pineapple leaf.
THE PAPER PLANE Shake ¾ oz each whisky, Aperol, amaro and lemon juice with ice. Strain into a coupe and
tequila, Campari and red vermouth with ice. Serve over ice with pink grapefruit garnish.

For a tropical spritz, stir drink instead of shaking it, then pour over ice in a large wineglass and top with soda water.
Garnish with a tiny, hand-folded paper plane attached to the glass rim with a mini clothespin.
Try it with dry white vermouth instead of red.
