Tomato Watermelon Bites
Serves 6 1 medium
seedless watermelon
multicoloured cherry tomatoes, halved
1 cup (250 ml) 1 tbsp (15 ml) 2 tsp (10 ml) 1 cup (250 ml)
extra-virgin olive oil
Pernod
soft goat’s cheese
2 tbsp (30 ml) water or milk 1½ tbsp (22.5 ml) finely chopped fresh basil 1½ tbsp (22.5 ml) finely chopped fresh mint ¼ cup (60 ml) sprouts of choice, for garnish 1 tsp (5 ml) red sea salt, for garnish
1. Cut rind from watermelon and discard. Trim watermelon into 12 planks measuring 1½ × 3-in (4 × 7.5 cm) and ¾-in (2 cm) thick. Arrange watermelon planks on a serving platter. 2. In a small bowl, toss cherry tomato halves with olive oil and pastis liqueur until lightly coated. Set aside. 3. In a small food processor or blender, combine goat’s cheese and water and blend until smooth. Transfer to a bowl and stir in basil and mint. 4. Spoon or pipe a dollop of goat’s cheese mixture onto each watermelon plank, then top with 2 to 3 tomato halves. Garnish with a sprinkle of sprouts and red sea salt. Serve immediately or chill for up to 20 minutes before presenting.
