Popped & Pressed Toasty genmaicha and bright lemon lift a cloud-like gin sour—delicate, nutty and quietly sophisticated in every sip.

In a cocktail shaker, combine Green Tea-Infused Gin, lemon juice, Simple Syrup and egg white. Dry shake for 5 seconds to emulsify egg white. Add ice and shake for 5 to 7 seconds. Strain into a coupe glass, garnish with a sprinkle of genmaicha and serve.

* To make Green Tea-Infused Gin, in a container, combine 6 oz (180 ml) London Dry Gin and 1½ tbsp (22.5 ml) genmaicha green tea. Allow to infuse for 20 minutes. Fine strain to remove solids. Store infused gin in a lidded container at room temperature for up to 1 month. ** 1:1 ratio of granulated sugar dissolved in boiling water. Allow to cool before using.
