Acorn Squash Shepherd’s Pie Serves 4 to 6 1 small Russet potato, peeled and cubed 3 medium acorn squash, halved and seeded ¼ cup (60 ml) butter 2 tsp (10 ml)

1. Place potato in a medium saucepan and cover with heavily salted water. Bring to a boil, then reduce heat to a simmer and cook until tender, 8 to 10 minutes. Drain and set aside. 2. Place squash on a microwave-safe plate, cut-side down. Microwave for 10 to 12 minutes, until tender. 3. Scoop squash flesh into a medium bowl and add potato, butter and 1 tsp (5 ml) salt. Mash and adjust seasoning to taste. Set aside. 4. Preheat oven to 375 F (190 C). 5. Place oil in a large skillet over medium-high heat. Brown ground beef in oil, then add onions, carrots, celery, garlic, remaining 1 tsp (5 ml) salt and pepper. Cook until vegetables are tender, about 10 minutes. Add herbs, red wine vinegar and tomato paste and cook until tomato paste has browned. 6. In a small bowl or liquid measuring cup, make a slurry with flour and stock. Add slurry to meat mixture along with beer, Worcestershire, ketchup and bouillon cube. Cover and simmer for 10 to 12 minutes. Remove from heat and fold in peas. Season to taste. 7. Place meat mixture in an ovenproof baking
